A quick and delicious dish to impress your guests - leave out the Sichuan pepper if it's too hot. Ingredients:
3 large cleaned squid hoods |
1/4 cup corn flour |
2 tsp salt |
2 tsp ground white pepper |
2 tsp chinese five spice |
1/2 tsp ground sichuan pepper |
oil for deep frying |
Directions:
1. Use a small sharp knife to cut squid hoods length ways from opening to tip. Lay squid hoods flat, inside up and score diagonally. Cut squid into 4 cm squares. Pat dry with paper towel. 2. Combine cornflour half the salt, half the pepper, half the five spice and the Sichuan pepper in a bowl (or a plastic bag). Add squid and toss to coat. Combine remaining spices in a small bowl and set aside. 3. Fry in oil for 2 minutes or until squid curls and turns golden brown, drain well. Sprinkle with remaining spice mixture. 4. Serve with lemon wedges. |
