Salsa Verde - the Italian One |

In Italy there is a delicious main meal called Bollito Misto served in many homes and restaurants, and this is the sauce served alongside. I have had this in one of my oil-stained and spattered notebooks for many many years, so I don't have the faintest where it came from, but I do know it's excellent,easy and good in sandwiches too :-) Ingredients:
1 bunch italian parsley, washed |
1/2 garlic clove |
1/2 spring onion |
4 anchovy fillets |
1/2 teaspoon mustard |
1 tablespoon lemon juice |
100 ml olive oil |
1 hard-boiled egg, chopped (optional) |
Directions:
1. put first 4 ingredients in a food processor or blender and mix until smooth. 2. add mustard and lemon juice, mix again. 3. slowly add in olive oil while machine is running. 4. taste and add salt and or pepper if needed. 5. if using the hard boiled egg add it to the sauce after it is in the serving dish. |
