this is a recipe of an old friend Jose Cordova. My famly likes it on pulled pork. Also this is a Tyler Florence recipe of food 911.
Ingredients:
3/4 lb tomatillo
1 jalapeno, stemmed
1 small onion, quartered
4 cloves garlic
1 tablespoon salt
1 teaspoon dried cilantro
2 limes, juice of
Directions:
1. simmer tomatillos, onion, jalapeno, garlic with salt in 3 to4 cups water for 6 to 10 minutes until tomatillos are soft.
2. blend the vegs with the cilantro and lime juice and about 1/4 cup of the cooking liquid to the coarseness you like.
3. taste and adjust the seasoning with more lime juice, salt,or cilantro.
