I found this in an old TOH. I really like it. Ingredients:
1 1/2 cups water |
1 1/2 cups chunky salsa |
2 cups uncooked instant rice |
1 -1 1/2 cup shredded colby-monterey jack cheese |
Directions:
1. In a saucepan, bring water and salsa to a boil. 2. Stir in rice. 3. Remove from the heat; cover and let stand for 5 minutes. 4. Stir in cheese; cover and let stand for 30 seconds or until cheese is melted. |
