A typical Costa Rican recipe for salsa, which is served with black beans, black bean soup, rice, etc. . Adapted from Lifelines magazine. Enjoy! Ingredients:
2 large green tomatoes |
2 large tomatoes |
2 large vidalia onions (or spanish onions) |
1 bunch fresh cilantro (coriander leaves) |
1 tablespoon lemon juice (or lime juice) |
2 tablespoons balsamic vinegar (or red wine vinegar) |
Directions:
1. Chop the tomatoes coarsely; then finely chop onions. 2. Wash and chop the cilantro very finely (including stems). 3. Cover vegetable mixture with lemon juice and vinegar. 4. Let stand 30 minutes before serving. |
