A typical Costa Rican recipe for salsa, which is served with black beans, black bean soup, rice, etc. . Adapted from Lifelines magazine. Enjoy!
Ingredients:
2 large green tomatoes
2 large tomatoes
2 large vidalia onions (or spanish onions)
1 bunch fresh cilantro (coriander leaves)
1 tablespoon lemon juice (or lime juice)
2 tablespoons balsamic vinegar (or red wine vinegar)
Directions:
1. Chop the tomatoes coarsely; then finely chop onions.
2. Wash and chop the cilantro very finely (including stems).
3. Cover vegetable mixture with lemon juice and vinegar.
4. Let stand 30 minutes before serving.
