Serve as an accompaniment to any bean, rice or meat dish. The relish does not keep long, so if there is any left, fry it in a little oil and serve as a sauce for enchilada recipes, or over ranch-style eggs for breakfast. Ingredients:
1 tablespoon fresh cilantro |
1/2 small onion |
2 green chilies |
4 tomatoes |
1/2 lemon, juice of |
1/2 teaspoon salt |
1 teaspoon black pepper |
Directions:
1. Place the cilantro, onion and chilies into a liquidizer and process until finely chopped. 2. Add the tomatoes, lemon juice and salt and process again until tomatoes are roughly chopped. 3. Leave for 15 minutes before serving. |
