1 1/2 lbs whole roma tomatoes, unpealed |
1/2 medium onion, cut into chunks |
1/4 cup fresh cilantro, chopped |
2 -3 fresh jalapeno peppers |
2 garlic cloves |
1 1/2 teaspoons salt |
2 -3 tablespoons vinegar (cider or cane) |
Directions:
1. Heat broiler. Place tomatoes on a small baking sheet lined with foil. Broil 15-18 minutes, turning a couple times until soft, skins have split, and there are some dark spots. Allow to cool slightly. 2. Place tomatoes with rest of ingredients in a blender. Puree. Serve warm or refrigerate for later use. |
