Another quickie for a winters fix. Ingredients:
3 large tomatoes, cored and halved |
1/2 cup red onion |
2 cloves garlic |
2 jalapenos, seeded and minced |
3 teaspoons cilantro |
1 teaspoon vegetable oil |
1 teaspoon lemon juice |
salt and pepper |
Directions:
1. Squeeze out the seeds and place them cut side down and roast under a broiler till skins brown/blacken. 2. Cool Peel Chop Mix with other stuff. 3. Let stand 15 minutes. 4. Toss well. |
