This quick and easy recipe is easy on the waistline if you lighten it up with reduced fat mayo. Ingredients:
1/3 cup of mayo |
1/4 cup of salsa |
4 tsp minced fresh cilantro, divided |
dash pepper |
2 skinless, boneless chicken breasts cut into strips |
1 pkg taco seasoning |
1/2 sweet red pepper, thinly diced |
1 small ripe avocado, peeled and thinly sliced |
Directions:
1. Brown chicken strips in taco seasoning. 2. In a bowl, combine the mayo, salsa, 3 tsp cilantro, and pepper. 3. Add cooked chicken and toss to coat. 4. Let stand for 10 minutes. 5. Arrange red pepper and avocado slices on two salad plates. 6. Top with chicken mixture. 7. Sprinkle with remaining cilantro. |
