This is an easy and quick salmon patty recipe. I like to serve these with hollandaise sauce or a little gravy. The kids prefer them with ketchup :) Ingredients:
1 (14 3/4 ounce) can salmon |
1 egg, lightly beaten |
1/2 cup all-purpose flour |
1/4 teaspoon dill weed |
1 1/2 teaspoons baking powder |
2 tablespoons vegetable oil |
Directions:
1. Drain salmon, reserving 1/4 cup of juice. 2. Discard salmon bones and skin. 3. In a bowl, combine salmon, egg, flour, and dill; mix well. 4. Stir baking powder into reserved juice; add to salmon mixture. 5. Heat oil in skillet over medium-high heat. 6. Drop batter by 1/4 cupfuls into skillet. 7. Cook the patties for 2 to 3 minutes on each side or until golden brown. 8. Drain on paper towels. 9. Serve warm. |
