Salmon Zucchini Wedges

Snacks to while away the evening.
Ingredients:
1/2 pound zucchini,shredded(1-2/3 cup)
1/4 cup finely chopped onion
3 eggs ,well beaten
1/2 cup parmesan cheese,grated
1 tablespoon lemon juice
1/4 cup fresh parsley,snipped
1/4 teaspoon salt
1/4 teaspoon dried dillweed
dash of pepper
1(8oz) can (good) red salmon,drained,flaked,and cartilage removed
Directions:
1. In a saucepan,combine zucchini and onion,add water to cover.
2. Bring to boil,reduce heat and simmer,covered just till tender,about 3 minutes.
3. Drain very well,pressing out excess liquid.
4. Combine eggs,cheese,and lemon juice.
5. Stir in zucchini and oiion,parsley,salt,dillweed,and pepper.
6. Fold in salmon.
7. Turn into ungreased 8 pie plate.
8. Bake in a 350 degree oven till set 25 to 28 minutes.
9. Cut in wedges.
