Salmon with sweet potatoes |

Ingredients:
1 1/2 pound(s) skinless salmon fillet cut into 4 equal pieces |
1/4 teaspoon(s) salt divided |
freshly ground black pepper |
1 tablespoon(s) olive oil |
2 large sweet potatoes pared and cut into 1 chunks |
1 tablespoon(s) chopped fresh tarragon leaves |
1 1/2 teaspoon(s) red wine vinegar |
1 teaspoon(s) dijon-style mustard |
Directions:
1. Sprinkle salmon with 1/8 teaspoon of the salt and pepper to taste. In alrge skillet heat oil; cook salmon over medium heat, turning once, until cooked through, 5-7 minutes per side. Remove salmon from skillet to 4 plates; reserve pan drippings. Cover salmon to keep warm; set aside. 2. Add sweet potatoes and 1/2 cup water to skillet; cook over medium heat, stirring frequently, until tender, about 10 minutes. Remove to a medium bowl; add tarragon, vinegar, mustard, the remaining 1/8 teaspoon salt, pepper to taste, about 3 tablespoons water; toss to combine. 3. Divide sweet potato mixture over each portion of salmon; serve immediately. |
