Salmon with Spinach & Grapes |

Makes 3 servings (4 with 20-24 oz fish, I only had 1 lb) Preparation time: 15 minutes Cooking time: less than 20 minutes Ingredients:
1/2 teaspoon salt |
1 teaspoon dry mustard |
1 teaspoon dried thyme |
1/2 teaspoon pepper |
1 lb salmon |
2 teaspoons honey |
3 teaspoons olive oil, divided |
6 oz spinach |
1 cup grapes, halved |
1/2 cup red wine |
Directions:
1. Toss the spinach with one teaspoon oil and arrange in a 9-by-13-inch glass baking dish. 2. In a small bowl, combine salt, mustard, thyme and pepper. 3. Drizzle salmon with honey and sprinkle with seasoning mixture. 4. Reserve any remaining seasoning mixture. 5. In a large nonstick skillet, heat 2 teaspoons oil. 6. Brown both sides of salmon on medium-high heat about 2 minutes per side. 7. Place salmon on bed of spinach; cover loosely with paper towel or plastic wrap. 8. Microwave 2-3 minutes or until salmon is cooked through. 9. Cook the grapes for 1 minute on medium-high in same skillet. 10. Add wine; bring to boil and cook 4 minutes to reduce by half. 11. Season sauce with remaining spice mixture. 12. Serve salmon with wilted spinach, topped with grapes and wine sauce. |
