This recipe is in the October 2004 issue of Prevention Magazine. I love salmon and ginger. Ingredients:
1/4 cup packed brown sugar |
2 tablespoons dijon mustard |
1 tablespoon grated fresh ginger or 1 teaspoon ground ginger |
4 (6 ounce) salmon fillets, about 1 inch thick,skined |
1/2 teaspoon salt |
1/2 teaspoon fresh ground black pepper |
Directions:
1. Spray the rack of broiler pan with non-stick cooking spray. 2. Preheat broiler. 3. In a small bowl, whisk together sugar, mustard and ginger. 4. Lightly season both sides of salmon with salt and pepper. 5. Place on broiler rack and brush glaze on top. 6. Broil, 6 to 8 inches from heat for 8 to 10 minutes or until fish is lightly browned and opaque. 7. Serve with a salad of baby spinach. |
