Salmon With a Parmesan Crust |

Add an Italian twist to salmon by broiling the fish with Parmesan cheese, basil, pine nuts and breadcrumbs. Serve with new potatoes and steamed broccoli. Ingredients:
4 salmon fillets (you can also use cod) |
2 ounces fresh white breadcrumbs |
1 tablespoon pine nuts, lightly toasted |
3 ounces parmesan cheese |
4 tablespoons fresh basil, chopped |
1/2 ounce butter |
salt & freshly ground black pepper |
Directions:
1. Place the breadcrumbs, pine nuts, basil, butter and parmesan in a food processor and pulse until just combined. 2. Place the salmon under a moderately hot broiler for 5 minutes 3. Turn the salmon over, top with the breadcrumb mixture and press the fillets down gently with the palm of your hand. 4. Cook for a further 5 mins or until the salmon is cooked through. 5. Serve with new potatoes and broccoli. |
