This is a favorite salmon recipe which may be difficult to prepare if you don't have Green Chili powder available in your area. However, you can substitute canned Ortega Green chilies and puree them marinating your salmon fillets/steaks instead of using the rub. Ingredients:
4 to 6 (3-6 oz each) fresh or frozen salmon fillets or salmon steaks |
for the rub |
1/2 cup green chlie powder unseasoned |
1 tablespoon garlic powder |
2-teaspoons salt |
1/4 teaspoon cumin or coriander |
1/2 teaspoon schilling or other brand lemon and herb seasoning |
extra virgin olive oil |
or use the marinade |
6 0z's (1-cup)canned ortega green chilies (if available, bueno frozen chopped green chilie will do as well) pureed in blender |
with 2 tablespoons olive oil and 3 cloves garlic and all other spices as listed above omitting the garlic powder. add salt to taste. |
in gallon size zip-lock bag pour marinade and thoroughly saturate each piece of fish. place fish in baking dish pouring the marinade over the fish. cover with foil and bake for 25 minutes for boneless, skinless salmon fillets or 35-45 minutes for thicker salmon steaks. fish is done when it flakes easily with a fork but isn't dry. |
Directions:
1. Rub Salmon with Olive Oil 2. Thoroughly combine all dry ingredients in a small glass bowl then rub fish portions front and back with the rub until fully coated. 3. place fish in a baking dish and cover with foil. Bake approx 25-30 minutes for smaller fish fillets or up to 35-40 minutes for thicker salmon steaks. Fish is done when it flakes easily with a fork but is not dry. (Overcooked fish will become very dry. ) 4. Serve and Garnish each fish with a quick made tomato salsa: Diced sweet onions, 1 crushed garlic clove, chopped tomatoes, chopped fresh cilantro and lemon juice to taste(optional) |
