An easy lunch or light dinner that is quick and easy. From BHG. Use any kind of bread or rolls your family likes to assemble the sandwiches Ingredients:
1/2 cup chopped broccoli or 1/2 cup cauliflower |
1/4 cup shredded carrot |
1/4 cup chopped cucumber |
1/3 cup mayonnaise |
1/2 teaspoon dried dill |
1/8 teaspoon pepper |
7 3/4 ounces salmon, drained and slightly flaked (skin and bones removed if necessary) |

green pepper ring |
Directions:
1. In a bowl toss together all the vegetables except the green pepper. Stir in the mayo, dill weed and pepper. 2. Fold in the salmon. Assemble roll or bread, salmon mixture and green pepper rings into a sandwich. |
