Salmon Stuffed Baked Potatoes |

These baked potatoes are perfect as either a side dish or light lunch. Serve with a tossed salad Ingredients:
4 large baking potatoes |
1 7 1/2 oz can salmon |
1/2 c sour cream |
1/4 c chopped sharp cheddar cheese |
1 tbsp chopped green onion |
1 tbsp chopped dill |
1 tbsp lemon juice |
1/2 tsp hot pepper sauce |
sea salt, pepper and smoked paprika to taste |
1/3 c shredded cheddar |
Directions:
1. Scrub potatoes, prick potatoes and bake in a 400 F oven for 45 to 55 minutes or until tender when gently squeezed 2. In bowl,combine salmon, sour cream, diced cheese, onion, dill, lemon juice and hot pepper sauce. 3. Season to taste with salt, pepper and smoked paprika 4. Cut a 1/2 in thick slice from top of each potato 5. Scoop out pulp, leaving a 1/4 in shell 6. Mash pulp and stir into salmon mixture 7. Spoon into potato shells 8. Top with shredded cheddar 9. Bake at 400F for 15-20 minutes until tops are crisp |
