This salmon salad is delicious on a plate or in a pita or wrap. Ingredients:
1 can salmon, drained |
1 green onion, chopped |
1 stalk celery, diced |
1 cup bean sprouts |
1/4 cup each chopped fresh cilantro and parsley |
mixed greens |
1 tbsp. sesame seeds, toasted |
dressing |
2 tbsp. plain yogurt |
1 tbsp. mayonnaise |
2 tsp. sesame oil |
2 tsp. lemon juice |
Directions:
1. Combine salmon, green onion, celery, bean sprouts, mixed greens, cilantro and parsley. In a small bowl combine yogurt, mayonnaise, sesame oil, lemon juice; pour over salmon mixture and mix gently. Sprinkle with sesame seeds. |
