Quick and easy salmon salad
Ingredients:
1/2 lb salmon
1 tablespoon capers
1 lemon
7 cherry tomatoes
2 tablespoons feta cheese
5 asparagus
10 olives
1 garlic clove
1/4 cup red onion
1/4 teaspoon oregano
4 cups romaine lettuce
1/8 teaspoon salt
1/8 teaspoon pepper
1 teaspoon olive oil
Directions:
1. Preheat broiler on high.
2. Remove skin from Salmon.
3. lightly brush with olive oil, salt and pepper.
4. Broil fish for 5 minutes on foil lined broiler pan.
5. cover fish with another sheet of foil and cook for another 4-5 minutes.
6. blance the asparagus.
7. Chop the garlic, onion and slice the olives.
8. And the cooked salmon, capers, tomatoes, aspargus, garlic, onions, and olives.
