This is a perfect, light and summery salad! It has really bright flavors, and is a new favorite at our house! Ingredients:
3/4 lb skinless fillet salmon |
1 large cucumber, peeled, seeded, and chopped |
1 large red bell pepper, seeded and chopped |
4 scallions, chopped |
1/2 lemon, juice of (or 3t. lemon juice) |
3 tablespoons extra virgin olive oil |
Directions:
1. Preheat oven to 350. Place the salmon in a medium baking dish and bake, covered, until cooked through, about 15 minutes. Let stand until cooled. 2. In a medium bowl, mix the cucumber, bell pepper, scallions, lemon juice, and olive oil together. Add the baked salmon, flaking the meat with a fork, and mix until well combined. 3. Season with salt and pepper. |
