A fresh and light alternative to wheat pasta, rice pasta is perfect for summer pasta salads. Adapted from the â??The Onion Skin, â? July 2007. canned salmon, rice pasta spirals or whole wheat rotini , Original Miracle Whip or olive oil , fresh lemon juice , ground black pepper , red bell peppers, , onion , celery , flat leaf parsley, salt , kalamata olives cvt Ingredients:
14 oz canned salmon |
8 oz rice pasta spirals (117321) or whole wheat rotini |
6 tbsp original miracle whip (4027) or olive oil |
3 tbsp fresh lemon juice |
1/2 tsp ground black pepper |
2 large red bell peppers, diced |
1 cup diced onion |
1 cup diced celery |
1/2 cup flat leaf parsley, finely chopped |
1 salt to taste |
64 g (1/2 cup) kalamata olives |
Directions:
1. Cook pasta according to package directions. Drain and cool. 2. Drain salmon and separate into bite-sized pieces. 3. Whisk salad dressing or olive oil, lemon juice and black pepper together in a large bowl. Add pasta, salmon, red peppers, onion, celery, parsley and olives. Toss to combine and season to taste with salt. Chill. |
