My husband and I tested many salmon patty recipes, but were not happy with them because the filler seemed to overwhelm the salmon. But when we got to this recipe, we were happy indeed. This was our recipe of choice from then on. I found this recipe on . The patties are delicious served with peas in a white gravy.
Ingredients:
1 (16 ounce) can red salmon (pink salmon may be used)
1 1/2 cups leftover mashed potatoes
1 medium onion, chopped fine
1 egg
about 1/4 tsp. pepper, to taste
Directions:
1. Drain the salmon reserving the liquid. Break the salmon into a bowl.
2. Add the chopped onion, mashed potatoes and egg to the salmon. Mix thoroughly with your hands. If too stiff, gradually add enough of the salmon liquid until it is easy to work with.
3. Shape into patties and fry in oil until nicely browned., about 3 or 4 minutes per side.
