The temps just shot downward again....time for some simple and homey comfort food. Ingredients:
2 medium yukon gold potatoes, chunked |
1 medium onion, diced |
2 tablespoons butter |
2 cans good salmon, cleaned, drained & boned |
4+ tablespoons cream |
salt and pepper to taste |
pastry for a 2 crust pie (i use frozen pie crusts) |
Directions:
1. Boil potatoes and onions; drain and mash, adding butter and cream; 2. Fold in salmon; 3. Add salt and pepper to taste; 4. Spoon onto bottom pie crust; lay top crust on pie and crimp edges; 5. Brush top crust with a little milk and sprinkle with 6. paprika; 7. Bake at 350 until crust is brown, about 45 minutes; I put foil on the edges of my pie crust until the final ten minutes of baking so the crust will not get too brown. 8. Note: can add vegetables of choice to the mix just for variety - green peas, asparagus, whatever you like! |
