Easy, fast, and very elegant! Serve along with sliced tomatoes and rice pilaf or angel hair pasta tossed with butter and fresh herbs...makes a very impressive presentation. You can make your own pesto and mince fresh garlic, but, when time is short or you just don't feel like the extra work, and still want a delicious dinner, the jarred minced garlic and prepared pesto is the answer...and nobody needs to know!! :) Ingredients:
1 1/2 lbs skinless salmon fillet, cut into 4 equal pieces (the fish market should be able to do this for you) |
2 teaspoons olive oil |
1 1/2 tablespoons minced garlic (i even cheat and use the jarred minced garlic) |
1 (7 ounce) container prepared refrigerated basil pesto (i like buitoni's, found in the refrigerated section of the supermarket where you find the fresh past) |
Directions:
1. Preheat oven to 350 degrees F. 2. Rinse the salmon fillets under cold water and pat dry. Brush the fillets with the olive oil and place in 8-inch square baking dish. Sprinkle the minced garlic over the salmon fillets. Then, spread an even amount of the pesto sauce over the salmon fillets, making sure that they are well covered. 3. Place the baking dish, uncovered, into the preheated oven and bake, without turning, for about 15 minutes, or until fish flakes easily with a fork. Serve immediately, while still hot. |
