Salmon Patties With Dill Sauce |

I recently made salmon filets on the grill and had plenty of leftovers. With a few added ingredients I turned them into a very tasty appetizer, that could also be a side, or even a main course, if you wanted to eat light. Ingredients:
salmon patties |
2 cups cooked salmon |
1 1/2 cups panko bread crumbs |
2 t red onion, minced |
2 t celery, minced |
2 t fresh parsley, chopped |
1 tsp kosher salt |
1 tsp pepper |
1/4 tsp cayenne pepper |
1 tsp old bay seasoning |
1/2 tsp lemon zest |
3 eggs |
3 t mayo |
2 t olive oil ( for frying, so any oil will do) |
dill sauce |
1 cup sour cream |
1 1/2 t fresh dill |
1 tsp lemon zest |
1/2 tsp salt |
Directions:
1. Remove skin from the cooked salmon, and check for bones 2. Mash with a fork in a large bowl, and add all ingredients except the oil See Photo 3. Heat the oil in a pan on medium, make sure it's hot before adding the cakes 4. Form salmon into small patties, and fry for about 2-3 minutes each side, or until golden brown, and crisp. See Photo 5. Blend the ingredients for the dill sauce, and serve with each pattie 6. ** these were great on the grill, too! |
