Salmon Patties

This recipe calls for canned salmon, but I prefer to use the salmon in foil packets. That way I don't have to pick out the skin and bones!
Ingredients:
9 oz canned salmon
1/4 onion, chopped
1/4 cup bread crumbs
1 egg, beaten
1 tbsp butter
1 tbsp olive oil
Directions:
1. In a medium sized bowl combine salmon, onion, breadcrumbs, and egg, add salt and pepper to taste. Heat oil and butter in a large skillet in medium-low.
2. Form 1-2 Tbsp of salmon mixture into a patty (1 1/2 -2 in diameter). Place patties in pan and brown on both sides. It may take 4-5 minutes per side to brown. Remove patties to a paper towel lined plate and blot excess oil.
3. Makes aprox. 7 (2 ) patties
