good use of canned salmon. Tasty with mayo and mustard. Ingredients:
14 3/4 oz salmon |
1 onion, medium, chopped |
1 t olive oil |
2/3 c bread crumbs |
2 large eggs |
1 t mustard |
1 t olive oil |
Directions:
1. Saute onion in 1 T olive oil until soft. Cool slightly. 2. Beat eggs, flake in salmon, stir in mustard, 1/3 c bread crumbs, and cooked onions. 3. Form into 6 patties, coating with remaining breadcrumbs. 4. Heat remaining oil in skillet, cook patties over medium-high heat, about 5 minutes a side, until brown and crispy. |
