Both my husband and I grew up with this recipe as it will feed your family on a budget is healthy and very easy to prepare. I have no idea where the recipe came from other then my mother made these along with many moms during the 60's. I like this recipe as it has just a few ingredients that I always have on hand, it only takes minutes to prepare a good meal when adding a vegetable and mashed potatoes. Ingredients:
1 (14 ounce) can salmon |
12 -14 saltine crackers, crushed |
2 large eggs |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1 teaspoon worcestershire sauce |
1 teaspoon thyme |
1 tablespoon parsley |
white sauce |
2 tablespoons butter |
1/4 cup flour |
2/3 cup milk |
Directions:
1. Crush crackers into salmon 2. Mix ingredients together, 3. Form into palm size patties. 4. I prefer a lot of pepper so add salt and pepper to taste. 5. In heated and greased pan cook patties on med to low heat until browned. 6. Sometimes I use a cooking spray, other times olive oil. 7. For sauce:. 8. Melt butter. 9. Stir in flour. 10. Cook and stir until ball forms. 11. Add milk slowly while stirring. 12. Cook until smooth and thick. 13. Add salt and pepper to taste and parsley if wanted. 14. Serve patties on platter and pass the sauce. |
