This recipe has been in my favorite cookbook for about 15 years and Im not sure of the source, but these always turn out delicious. Ingredients:
2 (14 ounce) cans salmon |
2 eggs |
28 saltine crackers (squares, crunch into course pieces) |
1 teaspoon salt |
1 dash pepper |
1 teaspoon poultry seasoning (optional) |
Directions:
1. Drain Salmon and carefully remove the bones. Use fork to cut into pieces. Add Eggs, salt, pepper, and seasoning. Add crackers. Mix. Using your hands, form balls and flatten into patties (like a hamburger). You can make them small or big. I prefer a biscuit size. 2. In a large Sauce pan, get the oil (or shortening) hot. Place the patties in the pan and fry to a golden brown on both sides. |
