A recipe from the Country Women's Association- Family Meals cookbook. You can make these gluten-free suitable by using a blended gf flour and gf breadcrumbs. Suggested serving with chips and salad or vegetables. Makes 8. Recipes uses Australian measures Ingredients:
1 (415 g) can salmon |
1 1/2 cups cooked rice |
2 tablespoons white vinegar |
1/2 cup plain flour (purchased blended variety) or 1/2 cup gluten-free plain flour (purchased blended variety) |
salt |
pepper |
1 egg, beaten |
breadcrumbs |
Directions:
1. Place drained salmon in a bowl and mash with a fork. 2. Add in the rice, vinegar, flour and salt and pepper. 3. Roll mixture into 8 balls and then flatten slightly. 4. Dip the patties into the beaten egg and then coat with breadcrumbs. 5. Pan fry in a little oil or butter until warmed through and golden. |
