fish cakes are atlantic provincial fare. These are light and delectable. they make a nice economical supper. Ingredients:
1 egg, beaten |
1 (7 3/4 ounce) can salmon, drained |
1 cup mashed potatoes (i use leftovers) |
1 small onion, finely chopped |
1 tablespoon chives, chopped |
salt & pepper |
2 tablespoons butter |
Directions:
1. Thoroughly combine ingredients except butter. 2. Shape into patties (use a little flour to hold together if necessary). 3. Melt butter in frying pan. 4. Fry patties tol golden on both sides. 5. Serve with chili sauce and salad. |
