Pasta with Salmon Ingredients:
375 g of linguine or pasta of choice |
400 g of salmon fillets |
500 g asparagus, trimmed, chopped coarsely |
1/3 cup finely grated lemon rind |
4 cloves of garlic, crushed |
1 cup of parsley |
1/2 cup (125ml) lemon juice |
8 green onions, sliced thinly |
1 tbsp of olive oil |
Directions:
1. Cook pasta in large saucepan of boiling water until just tender, drain. Place in a large bowl cover to keep warm. 2. Meanwhile cook salmon fillets on heated lightly oiled grill plate (or grill or barbecue) until browned (cooked as desired) and flake (remove bones). 3. Boil or steam or microwave asparagus until tender and drain. 4. Combine remaining ingredients in small bowl, pour over pasta and add salmon and asparagus, toss gently to combine. |
