Delicious served as an appetizer. Ingredients:
200g (7oz) cream cheese |
150g (5oz) smoked salmon |
1 tablespoon horseradish |
juice from 1/4 of a lemon |
1/4 teaspoon white pepper or a wee dash of hot sauce |
about 5 strands of chives, chopped and added at the end |
*do not put the chives in the food processor or blender. just fold them in at the end. this is also nice if you want to fold 1/4 to 1/2 teaspoon of chopped pickle into the already processed cream cheese and salmon. you don't want the salmon taking on a greenish tinge and that is why i suggest folding the chives or finely chopped pickle. |
garnish with slices or wedges of lemon. |
serve with a fresh loaf of wholemeal bread. |
Directions:
1. Blend the cream cheese, salmon, horseradish, lemon juice and seasoning in a processor or blender until smooth. 2. Blend the chopped chives thoroughly. 3. Pour mixture into a ramekin. 4. Chill until ready to serve. 5. Garnish with lemon and a side dish of capers. 6. Serve with buttered brown bread cut into chunks or slices. |
