I got this out in California. Probablly from the LA Times. My In-Laws had a lemon tree and their neighbors had an avocado tree, so I was able to get fresh, free avocados and lemons! Ingredients:
6 1/2 oz salmon, grilled or smoked (hickory smoked tuna in the pakage works well with this too) |
1 tbs chopped onion |
1 tsp chopped chives |
1 hard cooked egg |
2 california avocados, halved and pitted. |
lemon juice |
dill sauce |
1/2 cup mayo |
1/2 tsp dill weed |
1/4 to tsp garlic salt |
Directions:
1. Combine salmon, onion, chives and chopped egg white. 2. Place avocado on individual lettuce covered plates. Squeeze lemon juice over each half to preserve color. 3. Fill with salmon mixture. 4. Top with Dill Sauce, garnish with sieved egg yolk. |
