I like this recipe because I can use the salmon that comes in the easy-open pouch like tuna fish. No nasty skin and bones to worry about! Ingredients:
15 ounces salmon |
2 eggs, beaten (or egg beaters will work just as well) |
1/2 cup flour |
1/4 teaspoon baking soda |
1/2 cup buttermilk |
pepper |
Directions:
1. Drain salmon. 2. Add eggs, flour, and pepper. 3. Add soda to buttermilk, then add mixture to salmon. 4. Drop by spoonfuls into a skillet greased with non-stick cooking spray. 5. Turn as needed until done. |
