From my collection of handwritten recipes 1960's. Ingredients:
1 (16 ounce) can salmon (or 2 cups fresh cooked salmon) |
1/2 teaspoon salt |
cayenne pepper |
1 tablespoon chopped parsley |
1/2 teaspoon grated onion |
1/4 cup cracker crumb |
1 egg, well beaten |
Directions:
1. Flake fish, removing skin and bones. Add other ingredients and mix well. Shape into croquettes. Roll in bread or cracker crumbs. Beat one egg lightly with 1 Tblsp. water. Dip croquettes in egg mixture, then again in crumbs. Let stand 30 minutes. Fry at 375* until golden brown. Drain on paper towels and serve hot with tartar sauce and french fries. |
