Salmon Croquettes

Recipe courtesy Paula Deen. One that she used quite a bit in the old days! They don't need anything but sometimes we serve them with a horseradish/chive low-fat sour cream.
Ingredients:
1 (6 ounce) can salmon, flaked
1 egg, beaten
2 tablespoons green onions, diced
1/2 cup breadcrumbs
vegetable oil, for frying
Directions:
1. Over medium heat, heat oil in a mdeium skillet.
2. Combine canned salmon, beaten egg, green onions and 1/4 cup bread crumbs.
3. Form into patties and dust with additional bread crumbs.
4. Fry until golden brown, about 2 minutes on each side.
