I made up this recipe in my kitchen one night.....had only certain ingredients available and decided to plug it all together somehow. It is a really easy recipe and really delicious and healthy too. Ingredients:
4 salmon fillets, preferably wild salmon |
1/4 cup dijon mustard |
2 limes, juice and zest of |
1/4 cup tequila |
2 tablespoons ginger, freshly grated |
1/4 cup olive oil |
1/2 teaspoon dill |
1/2 cup yogurt, preferably organic |
1 dash old bay seasoning |
1/2 cup honey |
1 tablespoon salt |
1/4 tablespoon pepper |
Directions:
1. Spray cooking spray in a baking dish and place the salmon skin-side down. In a medium bowl, combine remaining ingredients with a whisk. Pour over the salmon and allow to marinate for at least 1/2 hour. Then cook at 400° for 8-10 minutes, depending on thickness [watch it]. Serve with wild rice and asparagus. |
