My mother, who hates salmon, loved this soup, and went back for seconds! It is absolutely delicious. I hope you give it a try. (submitted by bonneyjane) Ingredients:
2 tbsp olive oil |
1 large onion, chopped |
1/4 tsp celery seed |
1 tsp garlic powder |
2 potatoes, diced |
2 carrots, diced |
2 cups water |
1/2 tsp salt |
1 tsp pepper |
1 tsp dill weed |
14 ounce sockeye salmon |
1 1/2 cups milk, 2 |
1/2 cup creamed corn |
1 cup light cheddar cheese, shredded |
Directions:
1. Heat oil in a large pot over medium heat. Saute onion, celery seed, and garlic powder until onions are tender. Stir in potatoes, carrots, water, salt, pepper, and dill weed. Bring to a boil, and reduce heat. Cover, and simmer 20 minutes. 2. Stir in salmon, milk, corn, and cheese. Cook gently until heated through but do not boil. |
