This comes together quickly and tastes good too. It is easy to double if needed. I have used a salmon steak in place of the smoked salmon and it tasted just as good. I changed this slightly but it originally came from
Ingredients:
1 -1 1/2 cup smoked salmon, chunked
2 tablespoons butter
1/2 cup chopped onion
1/4-1/2 cup sliced celery
1/2 cup chopped bell pepper (green, red or orange)
2 tablespoons flour
1 1/4 cups chicken stock
1/4 cup sour cream or 1/4 cup fat free sour cream
1 teaspoon fresh dill, minced or 1 teaspoon dill weed
1/8 teaspoon pepper
1/2 teaspoon accent seasoning
1 tablespoon chopped parsley

Directions:
1. In a saucepan, melt butter, sauté onion, celery, pepper. Stir in flour, add chicken stock and cook over medium heat, stirring constantly until reaching boiling point.
2. Add sour cream, dill, pepper, accent, smoked salmon; heat 2-3 minutes, stirring constantly. Add parsley before serving. Bon Appetit!
