you can use any skinless boneless salmon products - Sockeye, Pink or Atlantic. Ingredients:
1 (170 g) can clover leaf atlantic salmon, drained (boneless skinless) |
1 1/4 cups chickpeas, drained |
1 cup cherry tomatoes, chopped, reserved (1/2 cherry tomato for garnish) |
1 sweet yelow pepper, half diced, half cut into rings |
1/4 cup low-fat italian salad dressing |
Directions:
1. Toss together the salmon, chick peas, tomatoes, diced pepper and dressing. 2. Serve over the top of your favorite greens or on its own. 3. Garnish with half a cherry tomato or yellow bell pepper rings and a sprig of chervil. |
