Love this unique combination of flavors! Found this one online a few years ago. Ingredients:
salmon cakes |
8 oz salmon flaked and cooked |
1 oz red onion minced |
1 oz celery diced finely |
1 oz red pepper diced finely |
1 egg, beaten |
1 oz bread crumbs |
salt - to taste |
pepper - to taste |
garlic pepper - to taste |
spinach salad |
1 bag baby spinach |
lemon juice |
1 red pepper, diced |
1 yelllow pepper, diced |
4 oz peccorine ramono cheese |
garnish |
1/2 c pecans |
canola oil |
pinch cayenne pepper |
pinch sugar |
Directions:
1. SALMON CAKES 2. Combine all ingredients 3. Form into patties 4. Sear in a saute pan 5. SPINACH SALAD 6. Wilt spinach in small amount of olive oil in saute pan 7. Sprinkle with lemon juice 8. DIce red pepper and yellow pepper 9. GARNISH 10. Place pecans on baking sheet 11. Lightly sprinkle with oil, cayenne and sugar 12. Toast at 350 8-12 minutes 13. PUTTING IT TOGETHER 14. Top salmon cakes with spinach, pepper dice, and cheese 15. Garnish with toasted pecans |
