Salmon Burgers with Mango* Salsa |

Moist and tasty take on an old standby Ingredients:
1/3 c green peppers, finely chopped |
1/4 c dill, fresh, chopped |
3 t chives, chopped |
3 t breadcrumbs (i use seasoned) |
1 egg |
2 tsp garlic, minced |
1 lb. salmon, skinned, cut into chunks |
3/4 c mangoes, finely diced |
1/2 c red pepper, finely diced |
1/4 c green pepper, finely diced |
1/4 c red onion, finely diced |
2 t cilantro (fresh coriander) |
1 t lemon juice |
1 tsp olive oil |
1/2 tsp. garlic, minced |
Directions:
1. Put peppers, dill, chives, bread crumbs, egg, garlic and salmon into food processor; process on and off until chunky. Do not puree. Form into 5 burgers. 2. Salsa:In bowl, combine mango, red and green pepper, red onions, cilantro (coriander), lemon juice, olive oil, and garlic. Mix gently but thoroughly. 3. In nonstick skillet sprayed with nonstick spray, cook patties over medium heat 2 to 3 minutes; flip and cook other side 1-2 minutes, until just done at center 4. Serve with salsa 5. *Note: If you can't find ripe mangoes, peaches will work. |
