Unsure where I came across this recipe. It's a good alternative to beef.
Ingredients:
1 (14 3/4 ounce) can pink salmon
1/2 cup italian seasoned breadcrumbs
3 tablespoons mayonnaise (i prefer hellman's light)
2 large eggs, beaten
2 teaspoons lemon juice
1 tablespoon dried parsley
1/4 teaspoon garlic powder
Directions:
1. Drain and flake the salmon into a medium mixing bowl.
2. Combine salmon, bread crumbs, mayonaise, lemon juice, egg, parsely and garlic powder & blend well.
3. Make 8 patties out of the mixture.
4. Spray a skillet with no stick cooking spray. Put burner on medium.
5. Put patties into the skillet, heat both sides until they are browned, and the salmon pattie is heated through.
6. Serve as is, or wrap in lettuce. You can also put on a bun of your choice (calories not added in).
