1 cup panko breadcrumbs, bread crumbs |
1/2 cup chopped celery |
1/4 cup chopped onion |
1/4 cup chopped chives |
1 egg white |
1 tablespoon sriracha sauce |
1 teaspoon kosher salt |
1/2 teaspoon black pepper |
1 lb skinless salmon, diced |
4 hamburger buns, toasted |
shredded iceburg lettuce |
tomato, slices |
Directions:
1. Preheat grill to medium-high; line a baking sheet with parchment paper. 2. Combine mayonnaise, 2 tablespoons lemon juice, capers, and relish in a small bowl; season with salt and pepper; cover and chill. 3. Pulse panko, celery, onion, chives, egg white, Sriracha sauce, 1 tablespoon lemon juice, salt, and pepper in a food processor until minced; add salmon; pulse briefly. 4. Form salmon mixture into 4 patties; transfer to prepared baking sheet. 5. Coat both sides of burgers with nonstick spray; brush grill grate with oil. 6. Grill burgers, covered, until cooked through, about 4 minutes per side. 7. Place lettuce and tomato on buns; top with burgers and tartar sauce. |
