Salmon and Peas With Bow Tie Pasta |

1 lb bow tie pasta |
1 1/2 cups heavy cream |
1/2 cup dry white wine |
1 1/2 cups baby peas |
1/2 cup thinly sliced scallion |
1/4 cup chopped fresh dill |
2 teaspoons dijon mustard |
12 ounces salmon fillets, cut into thin strips |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
Directions:
1. In a large pot of boiling salted water, cook pasta until al dente. Drain. 2. Meanwhile, in a large skillet, combine cream and wine. Bring to a boil, add peas, and return to a boil. 3. Reduce heat to medium and cook uncovered until sauce is slightly reduce and peas are tender, 2-3 minutes. 4. Add scallions and dill to sauce and whisk in mustard. Add salmon and cook until fish is opaque, about 1 minute. 5. Season with salt and pepper. 6. Spoon sauce over bow ties and serve. |
