Ingredients:
4 oz. whole wheat penne pasta
1/8 c olive oil
1 c grape tomatoes, halved
5 cloves garlic, minced
1/2 c white wine (or low sodium chicken broth)
3/4 lb. salmon fillet, bonless, skinless,cut into bite size pieces
2 t basil, fresh, chopped
1 t oregano, fresh, chopped
1 t capers, rinsed and drained
Directions:
1. Prepare pasta per pkg. directions
2. Heat oil in large skillet over medium-high heat
3. Add tomatoes and garlic and cook until fragrant (:30 sec-2min)
4. Raise heat to high and add wine, salmon, basil, oregano, and capers and cook until salmon is just opaque, about 4 min.
