In NZ we're lucky to have farmed king salmon available at great prices, and when the cold smoked slices are on special we go nuts with salmon bagels, pizzas, scrambles and these little beauties, which are quite a dense muffin, more an English style scone. Read more . Easy to eat too many! Ingredients:
275g plain flour, sifted |
1tsp baking powder |
1big handful baby spinach leaves, destalked and finely chopped |
100g grated mozzarella (substitute any firm cheese you like here) |
250ml low fat milk |
75g butter, melted |
150g sliced smoked salmon, flaked |
150g feta cheese, crumbled |
4 pickled pimento peppers, chopped |
1egg |
1/2tsp sweet paprika |
salt and pepper to taste |
parmesan for topping |
Directions:
1. Preheat oven to 190celcius using fan bake option if you have that, otherwise 200 2. Put flour, baking powder, chopped spinach, grated cheese and peppers in one bowl 3. Melt butter and mix into another bowl containing all the other ingredients 4. Pour contents of wet bowl into dry bowl (hope it was big enough!) 5. Mix with a metal spoon, just long enough to combine them 6. Turn mix portions out into a greased, twelve slot muffin baking pan 7. Bake on middle shelf for 24 minutes (ovens may vary!) 8. Let cool just long enough so as not to burn your mouth 9. Enjoy |
