Salata Batatis Egyptian Potato Salad |

This is so quick and easy, and great if you love potatoes. Ingredients:
5 large potatoes(cooked & diced into 1/2 inch cubes) |
2 eggs,hardboiled |
1/4 cup green onions |
1/4 cup parsley |
1/4 cup fresh mint |
1/4 cup olive oil |
2 cloves of garlic |
1/4 cup lemon juice |
salt & pepper to taste |
Directions:
1. Place the finely chopped first six ingredients in a large salad bowl. 2. In a separate bowl,mash the garlic with the salt. 3. Add lemon juice,oil,salt & pepper and stir. 4. Add the dressing to the rest of the ingredients and toss gently,being careful not to crumble the potatoes and the eggs. 5. Serve chilled. |
